Chicken Pesto Pasta Recipe by Accessible Nutrition

Chicken and Spinach Pesto Pasta

Serves around 3 adults

This is one of my favourite recipes. It always goes down treat. It’s easy, fast and super tasty! It’s so quick that the sauce should be ready by the time the pasta is cooked

Ingredients:

  • 1 cup frozen chopped onion

  • 1 chicken breast, diced (see tips section)

  • 2 teaspoons or a tiny splash of soy sauce

  • 300g baby spinach

  • 1 tub of pesto dip

  • Your favourite pasta

Method:

  1. Put a saucepan of water on to boil. Add the pasta once the water is boiling.

  2. While waiting for the water to boil, heat a small amount of oil in a fry pan with a lid then sauté the chopped onion until soft.

  3. Add the chicken and cook, stirring frequently.

  4. Add a tiny splash of soy sauce and stir through the chicken and onion mix.

  5. Add the baby spinach and cover the fry pan with the lid until the spinach has wilted. If it seems to be taking a while, you can add a small splash of water to help it along.

  6. Once the spinach has wilted, add the pesto dip and stir through.

  7. Once the pasta is cooked, drain it and then stir through the sauce.

  8. Dinner is served!

Tips:

  • Your local butcher will almost certainly be happy to cut up your chicken (or other meats) for you. All you need to do is ask.

  • If your fry pan doesn’t have a lid, you can use a medium or large saucepan.

  • This recipe also tastes great if you add a handful of cashews or toasted pine nuts.
